Let's ease into the week with something delicious yet simple to make, a fall harvest stew! Once again, you get to use your trusty crock pot for this meal! I loved the addition of the apples and apple cider in this stew, it really gave it a slightly sweet/savory flavor and the squash and sweet potatoes made it very filling.
2 lbs chicken breasts
2 cups cubed, peeled sweet potatoes
2 cups cubed, peeled butternut squash
1 cup cubed rutabaga
1 cup diced carrots
1 cup sliced celery
1 cup diced onion
2 cloves garlic, minced
1/4 teaspoon fresh sage, chopped
2 cups apple cider (make sure only ingredient is apples!)
2 cups vegetable stock
1 Granny Smith apple, thinly sliced
1 teaspoon teaspoon Kosher salt
1/2 teaspoon freshly ground black pepper
- Add chicken to bottom of slow cooker.
- Add all other ingredients on top of chicken and gently stir to just to combine.
- Cover and cook on low for 6-8 hours, or until vegetables are tender and chicken is cooked through.
- Carefully remove chicken, shred with a fork, then return to the stew.
